When I went home during Thanksgiving to visit my family in the Poconos of Pennsylvania my mom introduced me to an orange pie. She had a funny story about it that we actually fed into, when mentioning for dessert that night she made an orange pie we (like many others apparently) said “an orange pie? That sounds weird!” Or something to that nature. She laughed and said she had to defend this pie to everyone especially my baking pro and overly-critical grandma (sorry grandma) saying something to the point of an “orange pie? Haha okay?” *picture skeptic face here*. Well my mom held strong to this pie and for good reason. Now check it out, I’m here making it (of course Healing Food Craft style) and having to carry on the tradition of saying “Yes, AN ORANGE PIE!” I know that’s what you thought when you read the title! It’s funny because this is now my husbands favorite treat, and up there on my lists of favorites ( I love so many things 🐷😂.)

Okay now that you know what people’s reactions will be when you tell them you made a fabulously delicious and nutritious dessert called an ORANGE PIE, let’s get you started in making it.

The orginal recipe has been altered Healing Food Craft style to use ingredients that are closer to their natural state, with no preservatives and an organic constituent with less sugar. Sound not fun? You’re crazy that means 100x the fun and your body will thank you. 🤗 Featuring an orginal crust recipe by me!

For the crust:
1 1/2 Cups Walnuts
1 1/3 Cups Rolled Oats
4 Mejool Dates
2 Tablespoons Grass-fed Butter

Bake 12 minutes on 350 degrees F.

For the filling:
3 Cups of Fresh Squeezed Orange Juice
1 Tablespoon Orange Zest
1/2 Cup Raw Sugar
Pinch of Salt
1/2 Cup Arrowroot Powder
1/4 Cup Cold Water
3 Egg Yolks
1 Tablespoon Butter

Refrigerate to serve pie chilled

This pie is great, it can curb that sweet tooth without being sickeningly sweet like a lot of desserts. With fresh-squeezed orange juice as the main ingredient, it is a healthier treat with a refreshing characteristic. I’d say the only thing about the pie that turns it into a dessert is the sugar added, which is a minimal amount. Made of simple ingredients, this treat is something you should feel good about creating and enjoying 🙌🏼

It’s nice to keep in mind my 80/20 rule. 80% the good stuff 20% the lesser good keeps a great balance for a diet.

-Love, your Jessica
